This Italian Sausage pasta soup has become one of our favorite dishes in the Williams household. It’s on rotation with my spaghetti. If I wait too long to make it, it’s sure to get requested. Try this super easy recipe that you can whip up for a quick week night meal and let me know how it turns out for you and your family.

Ingredients
- 2 tbs olive oil
- 2 carrots
- 1 onion
- 2 garlic cloves chopped finely
- 1-1.5 lbs sausage
- can of beans (red, kidney or cannellini)
- can of diced tomato (in the image this was all I had. I used half the can)
- pasta
- 2 leaves sage
- 3 strips of thyme
- salt pepper
Directions:
- cook pasta according to directions
- heat up olive oil
- Cook onion and carrot
- add sausage and cook thoroughly
- Gently add in beans and tomatoes
- Simmer for a few min, then add garlic
- add chicken broth (can use vegetable if that’s what you have on hand)
- ones this comes to a boil, add salt, pepper, sage and thyme
- let it cook for 10-15 (or longer if you want)
- Serve over pasta
Tips:
- use a wooden spoon
- use a good metal pan
- mince garlic with this press
- fresh herbs vs dry herbs make this recipe much better
