If you plan on making any adjustments this new year in regards to healthier eating, let me help you with a few tips. I love to cook and eat healthy, because it makes a huge difference in my mood and my facial complexion. Training with Brandon is going strong, so I can’t wait to take it to the next level this year. My goal is to share more recipes with you too.
It also helps that a very special person in my life got me a camera for Christmas. Shooting with creative photographers is awesome, but having a camera by my side allows me to capture all those other candid moments in life.
Did you ever think a salad could be so…beautiful? Yeah, me neither. This camera has amazing focusing capabilities, and none of the images fall flat the way they do on an iPhone. This is a simple salad with a lemon-honey poppyseed dressing I made from scratch. It’s so delicious I could lick the dressing clean off the bowl. See the recipe below for your next salad creation.
Here’s how to make this dressing:
juice of 3 lemons
zest of 1/2 lemon
1/4 cup dry white wine
1/4 cup unfiltered extra virgin olive oil
1/4 cup clover honey
1 clove fresh garlic, grated
2 teaspoons grated onion
1 teaspoon poppyseeds
1 teaspoon toasted sesame seeds
1 teaspoon sea salt
1 teaspoon freshly grated black or white pepper
Mix that all together and you have a yummy dressing that will stay fresh for up to two weeks.
For this specific salad I used mixed greens, sweet tomatoes, chopped walnuts, parmesan and dried cranberries. Of course, you can add your favorite ingredients. I love mixing sweet and salty tastes together in salads, because it’s all so fresh and natural that they complement each other well.
